RECIPE for the CUSTARD CREAM BUNS my sister made a few months ago from Apron's video titled: "Custard Cream Buns 卡仕達麵包|Apron". ⠀

CUSTARD CREAM⠀
Dough

Dough

Using a large bowl, combine the instant dry yeast, sugar, salt and bread flour.⠀

Add warm milk to the flour mixture.

Knead for 5 minutes, until it forms a smooth, soft dough. Then add warm butter and knead into the dough for another 5 minutes.⠀

Cover and leave to rise for an hour in a warm, draft-free area of your kitchen.⠀

Using a whisk, mix together the 2 egg yolks, sugar, milk and then vanilla extract, in a saucepan until smooth and free of lumps.

Place this mixture on the stove on medium heat, for 2 minutes and mix until thickened and smooth. Allow to cool completely.⠀

Assemble

After the dough has risen, punch it down and knead for 3 minutes. Divide the dough into 6 equal pieces. Cover and let the dough rise for 15 min again. Roll out each piece into a circle, press the back of a glass or jar into the center part to create a deeper mold in the center.⠀

Fill the center mold with custard. You can pip the custard in but I find using a spoon just as fine.⠀

Let it rest for 60 min so it can rise again. Start pre-heating your oven in the last remaining 15 minutes. After the full 60 min are over brush some milk on the dough. ⠀

Bake at 180°C / 350°F in the pre-heated oven for 15-17 minutes.
