Don't be put off by the spinach ingredients instead think of carrot cakes or a green colored banana cake. That's what this cake basically is. You won't taste the spinach at all, instead you'll get a vibrant natural green food color with some nutritions! It's a fun hidden vegetable cake, that's delicious and slightly healthier. Perfect as a birthday cake or for any occasion.

This forest Moss Spinach cake was inspired by a spinach cake I had a few years ago in Berlin. The recipe itself was inspired and adapted from the Polish recipes by gotujebolubie and deliciousplacebynatalia and made vegan.

Spinach Banana Cake Batter

Prep

Preheat the oven to 180C. Grease or line a 15cm cake tin with parchment paper if needed. I use a silicone form so I don't have to prepare the cake tin.

Blend 100g spinach with 125g of water. Add 1 banana and blend until you have a smooth puree.

Batter

In a big bowl combine the dry ingredients: 165g flour, 110g sugar and 1 tsp baking powder. Add the wet ingredients: 85g oil and the spinach-banana puree. Combine everything until you have smooth batter.

Bake in the oven

Pour into the prepared tins and bake for 50-60 minutes or until an inserted skewer comes out clean. Cool for 5 minutes in the tin and then turn onto a wire rack to cool completely.

Frosting

Using a whisk, whizz up the 80g vegan margarine, 80g powdered sugar and 150g vegan cream cheese until it is floofy (technical term). Depending on your vegan cream cheese brand you might have to add more margarine if the mixture is too runny.

Put 1/3 of the cream in another bowl to the side. Add 60g berries to the remaining 2/3 cream.

Assemble

Cut the crown top off from the cake and crumb it into small crumbles. You can do it with your hand, put it into a food processor or a blender.

Cut the remaining cake horizontally through the center to make two layers. Spread the prepared frosting evenly over one of the cake halves. Place the other cake half on top. Spread the remaining frosting over the top of the cake. Top with crumbled cake layer and the remaining 5g berries.

Let it cool in the fridge for at least 1h before serving the spinach cake.
