Budae-jjigae (부대찌개; literally "army base stew") or spicy sausage stew is a type of jjigae (stew), made with ham, sausage, spam, baked beans, kimchi and gochujang. The dish was created shortly after the armistice that ended the Korean War, using the scrounged or smuggled surplus foods from the U. S. army bases. Although the dish was born in the period of post-war impoverishment, it continued to be popular during the period of rapid growth, and is still popular today.

Sauce (Mix these in a small bowl)

PREP: Slice your spam, sausage, tofu, washed champignon, green onions and onions. Remove the stem from your enoki mushrooms and wash them.

SAUCE: Combine all sauce ingredients in another bowl.

ASSEMBLE: Place everything next to each other in your pot, top it with the sauce paste and pour chicken broth over everything. Let it simmer for 5 mins. I as much as my pot allowed to fit and added the remaining ingredients and chicken stock gradually later while eating.

Add your instant noodles, glass noodles and cheese, simmer until your instant noodles are ready to eat. The glass noodles will take longer.

Serve on a table, boil over low heat. Enjoy with warm soup.
