Quick and easy, crunchy and soft satisfying double-chocolate vegan chocolate cookies

I first wanted to make red velvet crincled cookies inspired by Cooking Classy  , Tutti Dolci, My Darling Vegan. Vegan. But then it somehow turned into this double chocolate recipe xD.

Ingredients Cookie Dough

Preheat the oven to 180°C.

Add all the wet ingredients together and mix thoroughly. Then add the dry ingredients mixing in by hand until you have a homogenous cookie dough.

Mix in 40g of the chocolate chunks. Your cookie dough will be very thick, but sticky enough to easily roll into balls.

Roll the chocolate cookie dough into small balls and space evenly on a parchment lined baking tray. Top the cookies with the remaining 10g chocolate chunks and nuts of your choice.

Bake for 20-30 minutes in the oven ( mine took around 30 minutes, depends on how thick your dough is and how soft you want them). Let them cool down or enjoy them hot (I prefer them hot fresh out of the oven) and serve them with milk of your choice if wanted.

Since I prefer to eat them fresh and hot instead of using the whole dough I store a bit in the fridge. Then I would often just pop them into our air fryer for 10 minutes at 190°
